Mission

Rack City Ribs is a London-based barbecue venture founded by Keon Cilly, an American-born chef with Jamaican roots. Drawing inspiration from both Southern American barbecue traditions and Caribbean flavors, Cilly offers a menu that features slow-cooked, applewood-smoked ribs, brisket, wings, and sides like mac and cheese and jackfruit slaw. His signature sauces, including a sweet bourbon glaze and a spicy pineapple jerk, reflect his unique culinary fusion.

Vision

Since its inception, Rack City Ribs has operated as a pop-up, collaborating with various venues across London. Notable residencies include stints at The Rose & Crown in Kentish Town in 2020 , The Gipsy Queen in 2021 , and The Grosvenor in Pimlico in 2022 . These collaborations have allowed Rack City Ribs to showcase its offerings to a diverse audience, building a loyal following. The brand has comfortably settled at The Golden Lion, Camden, 88 Royal College Street.
